These new skillets are made with the same iron as the US-ION™ originals, with the same patented machine-wrought method, but they're deeper and have an even stronger handle vent system. These carbon steel pans have gone through a proprietary heating and quenching process that has added a natural black or carbon coloration. This forced patina simplifies the break-in process by giving the pan even coloration on all surfaces.
