Late and not enough food

On recommendation I ordered food for 45 guests for my 60th birthday. The food itself was excellent, but the cook was an hour late and then started to prepare food that should have been pre-prepared. Also he was about to serve the food in a different order than agreed upon.
I wrote an email to complain and they still haven't answered a week later.
Pregocatering need to really tighten up their act, if they want to stay in business. If you place an order make sure that you have a specified description of the when, what and how much.
