Dal 1893 a Strada in Chianti, di padre in figlio, produciamo la nostra pasta allo stesso modo, nella stessa piazza nel centro del paese.
Pasta Fabbri è l’unica pasta artigianale prodotta con grani antichi italiani biologici 100% italiani ed essiccata lentamente, sotto i 38°C.
Infatti, i tempi di essiccazione vanno dai 3 ai 6 giorni e questo preserva le qualità organolettiche del prodotto, una capacità di assorbimento della pasta superiore e un’altissima digeribilità.
Produciamo 4 linee di pasta artigianale biologica di cui: tre di grano 100% italiano e una di farro 100% dicocco.

The teachings of our great-great grandfather, Giovanni, the first generation of pasta makers, have been handed down from father to son and we still follow the method that was passed down to us: slow drying and low temperatures are what it takes to ensure the pasta maintains its original aroma.
Drying therefore takes from 3 to 6 days, depending on the shape. This not only helps to give the pasta a
unique flavour, but also makes it highly digestible, as the proteins have been preserved.

Well, in order not to lose that flavour that you enjoyed first hand, we make sure that our ingredients do not undergo any sort of alteration.
Hence, we work at very low temperatures (no higher than 38°C) and we are in no hurry to get to the finished product. In fact, drying takes place slowly and naturally, a process we learned from our grandparents.
