“Niente glasse, niente creme, SOLO BALSAMICO!” Questo è il motto che contraddistingue la mia produzione. La mia acetaia è stata fondata nel 1950 da mio padre che ha creato quella che è un’antica tradizione locale a Modena, la produzione di Aceto Balsamico. Nel tempo mi sono occupato dell’ampliamento dell’Acetaia fino ad oggi, con oltre 600 botti dedicate alla produzione. Ho sempre cercato di avere un approccio molto rigoroso e rispettoso alla tradizione produttiva. La mia azienda, infatti, è sempre rimasta nel settore artigianale…non ci siamo mai trasformati in un’industria anche se, oggi, il 99,9% degli aceti balsamici è di origine industriale. Ogni nostra bottiglia è confezionata a mano, e ogni nostro prodotto è ottenuto senza l’utilizzo di prodotti chimici (comunque consentiti dal disciplinare di produzione), o procedimenti industriali. Non c’è poesia in quello che faccio, solo coerenza e consapevolezza che i miei figli sono i primi consumatori del mio prodotto, e mi aspetto che consumino un aceto balsamico buono, e soprattutto sano.

The quality of the vinegar was unmatched compared to anything I have had before. I have purchased the 59, 25r and 5 star types and have been amazed by the complexity and flavours that are so unique across all of them.
