Shibata Koutetsu R2 Bunka 180mm.
It is spectacular, it is a royal jewel and it is worth having in your kitchen. The knife glides through vegetables and meat like water, leaving a perfect cut, smooth and velvety to the touch.
The knife is so light and is not for the uninitiated.
Finally my dream of waiting for dough is over after 2 years.

This company has amazing customer support. I ordered a Shiro Kamo Gyutu from their site and UPS failed to deliver it. Cleancut were super helpful and opened a claim on my behalf. When UPS were dragging their feet about it CleanCut sent me out a replacement. Very very helpful, friendly, and a quick resolution. Cant recommend them enough!

I ordered two Shiro Kamo knives and have been enjoying them very much. Both knives arrived in pristine condition. The santoku is a Christmas present that hasn't been given yet, but the nakiri is already hard at work, and has been a pleasure to use.

Cleancut's product selection is fantastic. Their prices are very reasonable given the very high quality of the knives they sell.

My delivery was by UPS, who made a dog's breakfast of the job. Every step of the way, staff from Cutting Edge supported me in figuring out what on earth was going wrong, and gave advice. Eventually the knives arrived.

Quick delivery, good service. UPS delivered to the wrong place, but Cleancut answered very quickly on mails and corrected the problem.
