Several large pieces i cannot spit. Whole wheelbarrow of bark and random bits. Several peices with rot or dry rot.

On the piece size, that one is tough for us to address without us being told your preference up front. We process wood at a size that works across the board since every customer is different. Some want big pieces for long burns, others want smaller splits, some want a mix of both. So there's no way for us to know ahead of time. Happy to talk through it though.
The bark situation with your hickory is actually a species thing, shagbark hickory is the most common in Wisconsin. After kiln drying, that bark comes loose pretty easily and there will be pieces and bits throughout. Completely normal for that species, not a sign of a bad order.
The rot concern is something we'd like to see before saying much about it. Sometimes logs come in with natural discoloration from tree disease which is very common right now, doesn't affect how it burns, but we'd want to look at what you're seeing.
