Three stars? I'd give it five

From the moment you get in the doors of the ballyliffen hotel you start to unwind. I found the hotel staff friendly and polite, and despite there being other proto-guests arriving they took the time to help us feel at home. The rooms were comfy and the beds were cosy. Those was proved by 9 hours of sleep.
The food in the restaurant was excellent. Locally sourced and beautifully cooked we enjoyed every mouthful. I heavily recommend the crumble if it's on. Also the roasts were delightful.
It was wonderfully relaxing and a great place to explore the peninsula.
